Soba Restaurant Kosenryu is a popular soba restaurant located in Kumeninami-cho, Okayama Prefecture.

Gensoba noodles received from local farmers are ground in-house using a stone mill, and then made into 100 percent soba noodles. The fibers from Oyamabokuchi leaves are used as a binder for soba noodles.
Oyamabokuchi is a plant of the Solanaceae family that is native to China, and is cultivated in parts of the Chugoku region, such as Kumeninami Town and Tsuyama City in Okayama Prefecture.
The fibers from Oyamabokuchi leaves add elasticity and body to the soba without sacrificing its flavor.
