This popular dumpling specialty shop in the Setouchi port town of Hinase makes its signature dumpling filling, made with a blend of Okayama pork and locally-sourced Hinase dried shrimp, all prepared in-house, right down to the skin. Preparation begins as early as 4 AM, ensuring the flavor is sealed in the smooth, thin skin. Adding the special sauce served at the table enhances the richness and aroma, creating a flavor you'll want seconds of. The Shandong style is to serve the dumplings "boiled," rather than grilled or fried.

The menu consists of only "boiled dumplings," "hot and sour soup," "spare ribs," "grilled rice balls," and "rice (large and small)."

Both the dumplings and hot and sour soup are delicious.

In the past, the exterior of the store looked outdated and intimidating, like something you'd see on a TV show like "Kitana Shuran." However, the shop has recently relocated to a new location. The current store is located on a hill, and parking is available in front of the store. There aren't many seats inside the shop, so you may have to wait in line on weekends.
