Located in Minato Ward, Nagoya, Isshin is a hand-milled soba noodle shop that slowly grinds carefully selected domestic buckwheat flour in a stone mill inside the store to serve fragrant soba. The thin noodles are made using soft water and minimal binding agents, and are smooth to the touch, bringing out the original flavor of the soba.
The interior of the restaurant is a relaxing Japanese space filled with the warmth of wood. At the counter seats, you can enjoy watching the craftsmen grind, knead, and boil the soba noodles, while trying two or more types of soba at any one time. The table seats are spacious, and the lunchtime tempura and seasonal small dish sets are also popular.

In the evening, a wide selection of a la carte dishes and local sake is available, making it perfect for adult drinking parties. In addition to assorted itawasa and tempura, seasonal limited edition soba is also available. At the end of the meal, be sure to try different soba noodles and find the one you like best.
