Founded in 1970, Handmade Soba Toge is a long-established soba restaurant located in an alley in Nakayamashita, central Okayama City. Its signature dishes are its clear, refreshing broth and sharp, hand-cut soba noodles served in a bamboo steamer. Their specialty, "Toge Soba (Three Colors)," allows you to compare three different types of soba noodles, each served in a small bowl: grated mountain vegetables, shrimp tempura, and grated nameko mushrooms. This allows you to sample the natural aroma of soba noodles and the unique combination of different condiments all at once.
