Their specialty, Nikutama Soba, is made in the traditional style, with thinly rolled dough → cabbage → soba → meat → egg → sauce layered in that order. Finishing with a sprinkling of mayonnaise and fish powder brings out the savory aroma and flavor. The secret ingredient of dashi dashi adds a nice finish to the dish.
