Hayase Tofu Store is a tofu restaurant located in Tsuyama City, Okayama Prefecture. Established in 1899, it is a long-established store that continues to be loved by the local Tsuyama community.
The tofu at Hayase Totomi is made using 100% Mimasaka soybeans using traditional methods. Tofu is characterized by its fine texture and rich flavor.

The green soybean used for Tofu is a variety called Kiyomidori, which is said to be three times sweeter than white soybeans. We also use Sesan bittern, which is a natural bittern from the Seto Inland Sea.

The lunch menu is also popular and attracts many customers.
