Their signature dish is a clear soup made by simmering several types of soy sauce with bonito flakes and sardines for around nine hours, then adding Onomichi-style back fat for added richness. The thin, flat noodles, made by the authentic Inoue Noodle Factory, don't go soggy and are crisp to the last bite. Topped with plenty of Kujo negi (green onions), the pork thigh char siu (roasted pork fillet) delivers a classic flavor that unfolds the more you chew it.

Also popular are the deliciously spicy "Uraja Ramen," exclusive to Okayama, and sides like lemon fried chicken and pork rice bowls, making this a restaurant on the map of Okayama ramen.
