The restaurant's name "ippon hiki" refers to the method of grinding buckwheat seeds with the skin on in a stone mill and mixing all the flour together. This locks in the aroma and nutrients of the soba, creating a deep flavor and rich taste. In addition to cold soba noodles such as zaru soba and warigo soba, they also serve hot kamaage soba and kakesoba, so you can choose according to the season and your preferences. Himalayan rock salt is also served, and they suggest enjoying the original flavor of soba simply.
