Tanigawa Rice Shop, located in the mountains of Mannou Town in Kagawa Prefecture, is a "hot spot" for Sanuki udon enthusiasts. The menu only offers soy sauce udon, and you simply specify whether you want it hot or cold and the size (small or large). The shop's style is to drizzle a little of the dark or light soy sauce available on the table over the freshly boiled noodles served in a bowl, and then adjust to your liking with green onions, sudachi citrus, and vinegar. The noodles have a strong wheat aroma, a smooth texture, and a light chewiness. We recommend starting with just soy sauce, then adding green chili peppers tsukudani, vinegar, and chili pepper to enjoy the "Tanigawa style" flavor variations.

Toppings are simple, with a raw egg (kamatama style) being popular. The egg mellows the soy sauce's sharpness and brings out the sweetness of the noodles.
