Known as the originator of Tokushima ramen, the holy land of Tokushima ramen, "Chukasoba Inotani Main Branch" is a must-try for its "brown" soup, made with sweet and spicy pork belly and raw egg.
This long-established restaurant lies in an alley in the heart of Tokushima City. Founded in 1966, the main branch embodies the classic Tokushima ramen, featuring a rich, brown pork bone and soy sauce soup topped with sweet and spicy simmered pork belly and a raw egg, creating a sukiyaki-style finish. The ultra-thin, straight noodles are coated in a rich, savory broth, making it a perfect pairing with steamed rice. Start with a classic bowl of "Chuka Soba with Meat" served with a raw egg.

The restaurant is counter-based, with fast turnover. Using a ticket system, you can choose your preferred noodle size (small, medium, or large), "with meat," "raw egg," and "rice." Even when there's a line, service is quick.

[Trivia]
The restaurant first gained national recognition when it opened at the Shin-Yokohama Ramen Museum in 1999. It was instrumental in spreading the then-unknown "Tokushima Chuka Soba" to the public.
