We use locally grown buckwheat noodles. Gen soba is more nutritious than regular buckwheat, and has a rich aroma and strong flavor. In addition, tsuyu is a refined flavor made by slowly boiling bonito flakes, kombu seaweed, shiitake mushrooms, and water.

The specialty is "hand-made soba". Hand-ground buckwheat is made by grinding brown buckwheat with a stone mill, so you can fully enjoy the flavor of brown buckwheat. Tebiki soba is thick and solid soba.
